"The taste of technology at work: Caffarel's technical and production departments"
Caffarel has been writing the history of Italian chocolate for more than 180 years. It is a history that continues to this day in the province of Turin, specifically in the modern production facility at Luserna San Giovanni, which is located in the Val Pellice valley at the foot of the Alps.
The secret of Caffarel's legendary success is the company's ability to combine hand-made craftsmanship with the latest technology. All the processes required for transforming the basic ingredients into finished products are performed at Luserna San Giovanni using production methods that are modern and advanced, yet which still involve the old-fashioned skill of master confectioners.
The Luserna San Giovanni facility consists of three separate buildings with a total surface area of 20,000 square metres.
In the main building - a hallowed hall of fine chocolate making - the processes that are performed include roasting, mixing, refinement and conching. The perfect execution of these steps is essential for obtaining the finest quality chocolate from the cocoa beans. The resulting chocolate paste is sent to large shaping systems that prepare Caffarel's unique products, which are an integral part of the history of chocolate.
