How did we come up with the idea of adding hazelnuts to cocoa?

During the wars of the Risorgimento, the government of Piedmont had reduced the import of luxury goods, including cocoa. So, Paul Caffarel thought about replacing part of it with hazelnuts, which Piedmont produced in large quantities and very high quality then and continues to do so to date.

And so, during the Turin carnival of 1865, Caffarel invented the first Gianduiotto, named after Gianduja, the traditional costume of Piedmont.
